Every night this week, we have had a garden-fresh meal. Sweet corn, green beans, fresh herbs, spinach, broccoli. I love it! Everything on our plates has come straight from the garden, and even our meat is from the family farm. It’s such a good feeling to know we have fresh food and I love that our girls know how food is grown and can get excited about having a garden because they helped plant it.
Every night, I send them out to pick fresh green beans.
The only bad thing about having a garden is that sometimes, it can be hard to eat all the darn food. I freeze as much as I can, but there’s only so much I can do in two-hour increments before I have to nurse my always-hungry baby. For instance, we are literally drowning in green beans. And the ol’ steam and serve variety was getting a little boring.
So I saw this recipe in my Parents magazine last night and gave it a try. ! I highly recommend and it made eating green beans even more fun for the girls. “It’s like McDonald’s french fries, Mama!” Ada exclaimed.
Because after all–isn’t that the goal of our culinary slaving in the kitchen? To ensure our children’s food tastes like Mickey D’s?
Green Bean French Fries
*Green beans, washed and trimmed
*Flour
*Bread crumbs
*1 or 2 beaten eggs
*Salt and pepper to season
1. Pre-heat oven to 450 degrees. Spray a baking sheet with cooking spray.
2. Put the flour, crumbs and eggs in three separate shallow bowls. Season the bread crumbs with salt and pepper.
3. Dump the green beans in the flour and toss to coat. Dip beans in egg, then roll in crumbs to coat.
4. Repeat.
5. Bake for 10-12 minutes until crispy.

































I ABSOLUTELY VOLUNTEER TO TAKE ANY EXTRA VEGGIES OFF YOUR HANDS….I am surrounded by farmers out her in lapeer county but no garden myself. I grew up with a garden and it killsme not having one now!!!
Do you can pickles by any chance? I think I planted the wrong kind of cucumber–I have tons of them and they have pickers on them? I think they are for pickles!
We have prickles on our lemon cucumbers, but I can just rinse them and scrape them off. Still super tasty!

Melanie, mine taste so weird! They have a really dirty smell to them…it’s hard to describe!
